Zucchini patties

If you asked me two years ago to eat anything made with zucchini I would say no, now this is one of my favorite meals! It is delicious and it is really easy to make.

Shred the zucchini (I’ve used the smaller side) and I used five zucchini .

There is a lot of juice in the zucchini so let them sit for a bit so you can dry them as much as possible (put some salt to help with the juice).

I usually fry the patties but if you want healthier option you can for sure bake them in the oven.

  • 5 zucchini
  • one small onion
  • 3 eggs
  • 150 grams feta cheese
  • a little bit of salt (usually the feta cheese is salty plus the previous salt in the begging)
  • black pepper
  • real garlic (squished) or garlic powder
  • cilantro and dill
  • one cup of flour
